I loved the piece. But Danny, speak to me kindly about how to make cleaning mushrooms not a chore. What is your technique? It's the main reason I don't cook with them more often.

Honestly I know everyone says not to do this but I just rinse them off in a colander under running water and it’s fine! If you cook them hot enough the water goes away anyhow, I think fussily wiping them off individually is totally unnecessary

This is the most relatable power struggle I’ve ever read that involved mushrooms, leeks à la grecque, and ancient Macedonian succession politics. I laughed, nodded, and then felt a bit tender about the quiet ache underneath it all. The desire to be chosen and liked for wanting to be chosen — oof, too real. Anyway, please keep making goulash and pulling books off shelves. You're doing great.
